Slow Cooker Chicken Enchilada Soup:
This recipe is a winner for easy night cooking the whole family will love. Best of all it is easy to freeze and enjoy for months. Preparation time is only 15 mins.
1 cup diced white onion
⅓ cup chopped cilantro
1 can corn, drained
1 can or package enchilada sauce
1 can cream of chicken soup
1.5 lbs. boneless skinless chicken breasts (add whole)
1 box chicken broth
Shredded Cheese (any kind)
1. Place everything into a cockpot and stir. Cover and cook on high for 4 hours without opening the lid during the cooking time.
2. Stir, take out chicken & shred/ place back into crockpot- top with cheese and eat alone or with chips to dip.
