This recipe is great for a side dish, lunch or dinner meal. You can even prep the sweet potatoes into cubes and freeze until you are ready to pull out and use on the weekdays. Enjoy!
-2 sweet potatoes, peeled and cut into cubes
-1 yellow onions, sliced
-2 tablespoons olive oil
-kosher salt and freshly ground black pepper, to taste
-1/2-cup to 1-cup crumbled feta cheese
Preheat oven to 450.
1)Add the chopped sweet potatoes, onions, and olive oil in a bowl and mix.
2)Season with salt, pepper; mix together and place the sweet potatoes on prepared baking dish in a single layer.
3)Roast for 20 to 25 minutes, stirring once halfway through cooking, and cook until potatoes are fork tender.
4)Remove from oven and sprinkle with feta cheese.
