This recipe is easy for busy nights and can be made ahead of time to reheat. Used as a healthy comfort food option that is great as a main or side dish, goes wonderful with salmon or chicken. Check it out:
2 large sweet potatoes, peeled and diced
2 teaspoons olive oil
3 tablespoons honey
salt and black pepper
1 handful of walnuts
Preheat the oven to 400 degrees F. Line a large baking dish or sheet with aluminum foil for easy clean up.
In a large bowl toss diced potatoes with olive oil, honey and salt and pepper, until well coated.
Roast potatoes for 30 minutes, or until tender when pierced with a fork.
Sprinkle with pomegranate seeds and toasted walnuts.
Serve warm & enjoy on a cold winter night.
